Here’s a shot of me in the kitchen shortly before our food processor inspection. Do I look nervous? Well, I was! Lol. Even though I have been making these nuts for more than a decade and received a perfect score on my food manager test, I was utterly obsessed over doing everything correctly. I showed up an hour early and set up my work area, double checked my ingredients and rehearsed the process in my head multiple times. It’s truly amazing the amount of anxiety you can create for yourself sometimes. Luckily the inspector was super nice and in the end, we received an ‘A’ certification. Now to take a deep breath, and then back to work!
